Megan’s Low-Carb Muffins

jakelblog“Dancing requires the right fuel, and I perform my very best when I eat properly.” That’s Alvin Ailey dancer Megan Jakel talking about what she likes to eat in a post on the company’s blog. Not surprisingly, she eats lots of healthy vegetables and fruits and stays away from sugar, but “I always sneak in a little chocolate,” she says.

“Whenever I get a little extra time,” she adds, “I love to bake—it reminds me of my dad—and I love to bake things that are yummy without all of the guilt and indulgence of traditional sugary baked goods.” Here’s one of her favorite recipes.

Ingredients:
3 extra-large organic eggs
1/4 c. organic heavy cream
1/3 c. Splenda for baking OR 1/4 cup light agave nectar
5 Tbsp. organic coconut flour
1/4 c. shredded unsweetened coconut
1/2 c. organic blueberries
1/2 c. crushed walnuts
Pinch of salt
1 tsp. vanilla extract
1 tsp. cinnamon

To make:
1. Preheat the oven to 350°. Prep muffin tin with paper liners or cooking spray.
2. In a large bowl mix together eggs, cream, and sweetener.
3. Add coconut flour, coconut, and spices and whisk. (It may seem like not enough flour, but coconut flour is very absorbent, so don’t worry.)
4. Let thicken for 5 minutes, then fold in blueberries and walnuts.
5. Scoop batter into cups and bake 25-30 minutes.

Makes six muffins.
